ZFS  does turn on  the  ON-DISK write Cache  when you give  the whole drive  
to the ZPOOL  (  c5d0 & c7d0   are whole drives ) 


    This ofcourse means that writes to the pool is faster ,  
      Do you believe that the on-disk caches have any issues  on your  hardware 
 ? 

If You give ZFS a Partition  on the disk it wont turn on the write cache.

say you restore  the the partition table with fdisk(1m)   and then format(1m) 
and finally   give ZFS   partition  c5d0s0   and c7d0s0   
you will have a slower ZFS  without  write cache. 

if thats   stable   you have found  the problem  :-(
