At my old company we had 12 SLES servers running. The major differences are in 
the support as mentioned by Chuck and the levels of software. 

Typically SUSE Professional (now OpenSUSE) runs "bleeding edge" versions of 
products that may not have gone through rigerous testing to ensure 
compatibility, longevity and stability. (Not to say that they're bad, just 
not as tested.)  OpenSUSE only has support for two years.

SLES will be running "older" or more stable versions of the kernel and 
software packages which have been tested thouroughly by Novell and are 
supported by Novell for seven - IIRC - years. This is designed for the 
frazzled system admin geek who doesn't want to be trusing massive databases 
on new software. Also for us Systems managers, we can fall back on a 
corporate support system for any OS-related issues.
