thank you for your answer. I have to check, if I am able to scan all
hosts using the same portlist and configuration for scanning. At the
moment, all are the same, but we have to configure them during this week.
I think, this is also the reason why my limitation of tasks not working
(also the other answer from Eero (thanks for that!)).
I'd searched for a weekly scheduling, but wasn't able to find the fields
to define them (only a specific time, without a period) and took the
solution to start them using cron.
But now, you are right. There is the possibility of defining periods of
tasks. Unfortunately not during the advanced task wizard but after
finishing I am able to find it unter Configuration - Schedules.
Now, I will check, if I can reduce the tasks to one (or maybe two) with
the corresponding targets and configure the period.

"Maximum concurrently scanned Hosts" according to your needs.
Why are you using cronjobs? There are also Schedules where you could
specify a weekly schedule for the task.

we are using OpenVAS-8 on CentOS 7 (used the binary packages via
Atomicorp) and added 18 tasks, which should scanned weekly.
Currently I added 18 entries in crontab using the omp command to
prevent performance issues, by starting each task half an hour
after another.
I am unable to find any information about how to limit concurrent
scans, so is there a way to configure, to start all 18 tasks at
once (with the omp command) but only one scan could be active at once?
In the openvassd.conf I configured:
# Maximum number of simultaneous hosts tested :
max_hosts = 1
But that does not work :(
