You are correct: we don't have instructions on how to upgrade to a new version of Presentation Server or Studio at this point. This is definitely something that we should add. See the RFE below for tracking:

In a nutshell:
1) For Studio, use the Eclipse "Software Update" feature. For the details, look for the "updating from one minor version to another" instructions on the download page (http://www.orbeon.com/community/downloads).
2) For Presentation Server, replace in your current directory structure all the jar files under WEB-INF/lib by those found in the new orbeon.war. Then you need to copy over the web.xml and all the files in the WEB-INF/resources/config directory. This last step can be a little tricky as you might have modified those files on your own. You can just copy over the new version of the files you have not modified, while you want to merge your changes into the new version for the files you have modified (a good diff tool like Araxis Merge can greatly help there).
