I have also been looking at this.  There seems to be a number of articles mentioning only a few CAM orchids but they all basically say that it is mostly found amongst the orchids with thick leathery leaves (>1mm thick), and more so in species occurring in the forest canopy or open areas.
 
One of the better articles I have come across so far is "The occurrence of crassulacean acid metabolism among vascular epiphytes from Central Panama" by G. Zotz and H. Ziegler in New Phytol. (1997), 137,223-229.  Here he lists about 20 CAM species out of the 50 analyzed.
 
Klaus Winter also did a lot of work on CAM and I'm sure he lists quite a number of orchids (including Australian ones).  He confirms that the greatest uncertainty concerning the number of CAM plants exists in the Orchidaceae.
