I'll be doing some relatively informal origami teaching (non-profit!)
to a group of adults...
Any recommendations on models that seem accessible and gratifying for
adults? Models that are surprising? Models that are "impressive"
without being overly complex for the neophyte?

I wouldn't worry about it! Grown-ups seem to like the business card
frog, the water-cup, the traditional paper hat, the water-bomb, the
magazine-cover box, the flapping bird... just as much as kids do.
If adults think these quick traditional stand-bys are too childish
for them, point out the usefulness of these models for distracting
fractious kids!
