Personally, I really like using the single-color kami sheets made by Kyowa.
I first found it sold at a local store, but I've found that the paper fits
all the requirements you mentioned. It's thinner than other kami I've used,
holds creases really well, and most importantly, holds up a lot better than
any other kami. I use it to test fold basically any simple to reasonably
complex model I fold. For example, I've folded Roman Diaz's unicorn, Sipho
Mabona's white rhino, and Satoshi Kamiya's Pegasus from 6-inch squares, and
they've all come out fine.
I've also found them to be perfectly square, without exception (though I
think that's also affected by humidity).

I just looked up the brand, and it seems to be this:

packs from a local store, but I've seen their assorted color packs sold on
Amazon. I assume that the paper used is still the same, though.
