To me it looks like the flower has been folded from corona harmony paper such as http://www.amazon.com/FineArtStore-Corona-Harmony-Origami-Paper/dp/B0026QGKGO The design does not incorporate any color change. I have a bunch of octagonal collapse flowers with color change in my book Wondrous One Sheet Origami ( https://origamiusa.org/catalog/products/wondrous-one-sheet-origami ). I believe the same principles can be applied to this Sunflower to get the effect of color change. I have not tried though. I hope this helps. Meenakshi
