​A wonderful book for adult beginners is Florence Temko's "Paper Pandas &
Jumping Frogs".  It covers many basic and beginner models and introduces
some solid intermediate ones as well.  One of the best thing​
​s about it is how clearly the diagrams explain the step-by-step
instructions.​

​  She also suggests creative uses for the models once you've learned
them.  It was first published in 1986 and is available on Amazon (and
probably elsewhere).

When I was a beginner years ago - this was the first book I found that I
could really understand.  Once folding most of the models in it I had a
good understanding of many techniques, and was then able to tackle many of
the books that I found interesting but not as clearly laid out.
