THE best one is now sadly out of print (and has been for some time). It is "The 
Complete Origami Course" by Paul Jackson. 

And, sadly, many of the recent (within the last 15 years) beginner books are 
horrible because they have been rushed into print without proper diagram 
checking. Many of them have severe errors in the instructions.
