Hi guys, This isn't an OS solution, sadly it's proprietary & windows only, but I absolutely swear by Traceplus32 Web detective.
http://www.sstinc.com/web_products.html It works by opening up a debug session to the windows application, so it catches internal packet routing, and gives you a reliable dump of the http traffic in real time. I've found ethereal to be a little less user friendly, as it tends to involve reading a dump after you've done whatever you're trying to trace, whereas traceplus gives you feedback in real time.
