I don't believe you'll be able to produce a swf that can play on an older player. Flash 8.5 (9) is a requirement for Flex 2. The basic framework is built on the new player and takes advantage of all kinds of new features, e4x, etc. Not to mention you're required to write Actionscript 3 which won't run without the new AVM in Flash 8.5 (9).

I'm on Xubuntu and the SDK works like a charm - but there's no 8.5
player for Linux.

I've looked into the config file that you can get mxmlc to dump out
and I've gotten mxmlc to list all the commandline parameters... but I
can't find how to produce a swf that can run in an older player...
surely this will be possible in the final release - right?? I'm aware
that I'll lose functionality and I'm ok with that (I'm hoping that all
of the GUI widgets will still be available).

I just want to see my compiled SWF without having to drag it over to
some other computer.
