I haven't tried this, but some searching revealed this tutorial, might help:

However, I don't think flashplayer can export to a jpeg... you might be able to get the color info from a frame and pass it to an external app as described at the above link ( ? ).

Anyone know a good way to get FMS-style metadata into Red5 .flv's (recording from a webcam) ?

If I do 'strings'  on an FMS-created .flv, I get:

onMetaData
duration
@1AG
videocodecid
audiocodecid
canSeekToEnd
        createdby
FMS 2.0


...and 'strings'  on a Red5-created .flv yields only:

((()
1AA1O


Any advice? I need canSeekToEnd so that the playback swf that plays back the recorded .flv's can seek.

From the very brief description of your error, it sounds like you might have the wrong Java VM installed. Make sure (using java -- version) that you have at least Java 1.5 installed and on your path.

And if that isn't the problem, try including a bit more error information than 'blabla'.
