Yes this is possible. You can disable the menubar, the dock, etc with a single call. <http://developer.apple.com/technotes/tn2002/tn2062.html>

But I think you'll get problems with performance when the openglcontext spans over two monitors. And to my knowledge the fullscreen-approach of CGL should be faster because no window manager is present.
