I struggled a bit to try and figure out how to use Eclipse for anything
other than java. (Their documentation implies that it is possible, and even
the goal of the tool. But they don't show how to do it.)

Another FOSS IDE is Code::Blocks (www.codeblocks.org)

I haven't spent a lot of time with it, yet. But it looks like it might be
pretty good.

Any thoughts on using Eclipse? I hear lots of great things about it (mainly
from Eclipse people) but have had a hard time breaking into it, especially
since it is java-centric (at least the documentation is).
