There are a few good books on Xcode.. Look around in Amazon.com.

I started using Eclipse with the CDT plugin for C++ development on OS X as
the code completion and editor are way better than Xcode. I hacked Eclipse
and Cmake to work together (kinda, still some terminal involved) but
generally it is a worable solution.
