The heights are part of the routing.xml. See here:

You can create your own profiles also using your modified 
whatever_routing.xml like I described in several posts.

For your "feature requests", the bullets 1,2,3, it is best to create an 
issue: https://github.com/osmandapp/Osmand/issues
This requires program modifications and the developers hardly check this 
"users for users" mailing list anyway.
