Hello! 
Unfortunately we don't have tutorial how to customize it. You can find all 
OsmAnd map styles here 
https://github.com/osmandapp/OsmAnd-resources/tree/master/rendering_styles. 
This is default, you can make copy and change color via text editor and 
then test is on device.
