grep -i Generator Kernel/Config.pm
#       (Notifications, TicketViewAccelerator, TicketNumberGenerator,
    $Self->{TicketNumberGenerator} =
'Kernel::System::Ticket::Number::AutoIncrement';

you have some options available in Kernel/System/Ticket/Number/

You can also look to the online documentation. Somewhere there, is a example
on how to change it, or do one by yourself.
