I think what you are looking for is:

    # SendmailBcc
    # (Send all outgoing email via bcc to...
    # Warning: use it only for external archive funktions)
    $Self->{'SendmailBcc'} = '';

Put it in your Kernel/Config.pm and insert the mail address, that should 
recive all outgoing mails. For incoming mails you can setup filter 
roules that forward this messages to another mailaddress.
