You probably are referring to the configuration file you can export from Sysconfig. In Sysconfig the mail accounts are not stored; the 'sendmail' configuration - which could be an SMTP server - IS there though.
If you can't connect using 'IMAPS' and 'imap.gmail.com', it could well be a network connectivity issue. Could it be your hyper-v server does not have direct access to imap.gmail.com port 995?
