Looks like you have done a great job. RRD graphs are reasonable striagth forward for temperatures, providing you plan. If you you know your high and low values and can settle on a samlpe rate the rest is very achievable.
I'd like to hear more about the physical sensors, are you building them yourslef or are you using a comercial offering. What value do you give this equipment, you're clearly in a healthcare environment ?
