Can I use this with any LCD ? Are the pin settings of any LCD 2*16, 2*24 etc... always the same locations ?

The LCD I have is the one provided by Louis. I just plug it in the 1-Wire LCD board such as indicated in the photo. I check in the manual too.

I don't have Luis LCD but I think it should be the standard. I myself have HD44780 with hobby boards design.

You don't even have to have Arduino to test it. Few switches should be enough.

You just set the bits on dip switch and press "enter"  (Clock input)

I think that the smaller ones have the same pinout and the larger over 4x40 have one additional line to select the part of the display because it basically comprises of two displays. You should be able to find some markings on the display and gooogle the datasheet.
Also the backlight pins can be on left or right.
