Actually it turns out I didn't have it working , I just thought it was because I could see the number pad. Too bad!

Seriously, we've found the only way to do Android development (using monodroid at least) is with a real device. We've got a Galaxy Tab and a Galaxy S phone that seem to work fine for debugging.
