I would assume they are stored in the config database, but i have never investigated.
Unsure of how email server interacts with the SP farm, as it adds it as a server so to speak as part of the actual farm. Lots of detaching and reattaching databases. So far so good. Where we've got stuck is with CA settings for things like Outgoing Mail Settings. Any changes we make are simply not being restored. Are these settings stored somewhere else perhaps?
