Yeah - what Paul said :-) That last link on spreading the load is key. Another alternative is to do some kind of Citrix setup where the remote users are using an instance of IE that is closer to the SP farm. Bit of a sledge hammer approach, but in my Org where we have a centralised SP 2007 farm with users all around the globe we've seen better performance (from the end users perspective) in some locations with that approach (we also already had Citrix in place). I doubt the latency between Melbourne and Adelaide is that bad though (all depends on the links I guess).
