Heh, true.  But challenging *and* useful products are even more fun to
build.

With that in mind, I'd suggest trying to build an "indestructible,
untraceable chat system".  This'll also force you to learn about encryption,
which is another fun topic.

It's a sufficiently tight scope to be achievable by a single person, but a
big enough scope to be useful in the real world.  Plus, once done you'll
have a solid foundation on which to build VoIP, file transfers, etc.  

(But don't even *think* about anything other than chat until you have it
totally done and released to the world; the hardest part about coding is
resisting the incessant allure of feature creep.  You'll almost certainly
fail to get even the basics done anyway.  But if you can't stay focused on
the basics, then there's no almost -- you *will* fail.)
