Hello Andrew,
PacketFence does not change your SSID. It changes the VLAN you are placed in
for a given SSID.
So when first connecting to an SSID you are placed in a registration VLAN where
you must provide credentials which are then used to register your device and
associate it with a role (guest, staff etc.) that maps to a new VLAN.
As you mentioned disconnection uses various methods (RADIUS, SNMP, telnet or
SSH) to disconnect you from the AP.
Your network client will then attempt to reconnect to that same SSID where it
will then be placed into the VLAN that is associated with the role assigned to
your device when you provided credentials.
So there is no point where the device changes SSID. It only changes VLAN.
