Hello Jason, you just have to define interface eth0 as management and by default the pfdhcplistener will listen on this interface. BTW you don´t have to define the list of all subnet, all the dhcp traffic will be handle and will update the database with the ip/mac info.
But be sure that you receive dhcp traffic on the management interface with tcpdump.
