Method 1:
Select "New Resource", then use the pull down list in the resulting dialogue
box to change the resource type to "Multibit Icon."
Method 2:
In the box that contains the list of all of your project's resources, click
on the grey bar that says "Multibit Icons." Then press CTRL-K (assuming
that you are developing on a Windows box) and a new multibit icon will be
created.
