Actually, a situation where a button is grayed out shouldn't really come up in most situations, but if it were to occur, I'd just leave the button "as-is", and just pop an alert that tells the user exactly WHY the button is disabled. Like: "Paste operation is currently disabled because there is no data on the clipboard" (or maybe say "because you haven't cut or copied anything" to keep it simple).
