Perforce is great, but CVS is also pretty darned good - and it's completely
free and has much better GUI clients for Win/Mac (www.wincvs.org).  We use
the windows CVS server (www.cvsnt.org) with CVS clients on Mac OS 9/X,
Linux, and Windows and are very happy with it.  And, it's non-locking,
unlike Perforce and VSS, which I infinitely prefer.  About the only thing it
doesn't do that I wish it did was atomic commits, but you can't have
everything ;-)
