I would think that the program will crash on the emulator even without the
patch. Have you tried that at all?
To the best of my knowledge, there is nothing in PalmOS that could
distinguish patched from non-patched file; that is, there is no binary
checksum of the databases that you have to be aware of. But don't take my
word for it, I am not certified developer ;-)))
A possible scenario for the crash would be that you are changing some
graphical controls (as in an on-screen keyboard layout) and some of these
have width/height of zero.
It is much more likely to explain what you see with the slight difference of
the OS internals among different versions and the nature of the program
being patched (basically, it would perform as a hack as there is no other
way for it to operate).
