both devices are grayscale, but iirc, OS 3.1 doesn't support grayscale. But on your PalmIIIx with OS 3.5 you should be able just to call WinSetTextColor before you write the content of your table. Use a callback function to render the table cells on your own. Have a look into the Memopad application source. You should be able to add the WinSetTextcolor line before the WinDrawText line.
