Try to have an assistant who has done some card modeling.
You will need to provide hands on suggestions as the clients build 
and an extra pair of hands is invaluable.
At my wotkshops, my twin brother is my flunky.
And usually gets sent out to get whatever I forgot to provide.
For example, the windmill I offer uses a half a Q-tip for the blade driveshafft,
no Q-tip, no movement, "Bro, go get us some Q-tips"

I also cut out and bring a complete set of parts for each model that I provide 
to have those ready when a participant messes up cutting out any given part.
It saves a vast amount of time if they do't have to "start from scratch"
and reinforces the concept that we ALL make mistakes and there is an easy fix 
with papercraft.

For folding there are a couple metal rulers
but since I normally use the straight edge of my coffee table to fold against
I also bring a couple of foot long pieces of unfinished two by fours (the edges 
haven't been rounded off as with a "finished" two by four)
Participants often find it easier to align a card fold to a solid surface 
rather than apply the ruler to the fold line.

Since my free workshops have all been at Librarys and Schools I have to attempt 
to remember to bring any needed supplies.
These are beginner classes so I don't usually address stuff like finishing the 
white edges of the parts.
But I did have to send my Bro for the sharpies a couple of times.
The Look of the finished model usually overcomes any minor flaws or mistakes in 
it.
Only you and the builder will even notice them. Most people don't look that 
closely.
If you don't point it out, we won't even see them, we will just see the model.
If you Do get any nit-pickers, just sign them up for your double the price  
advanced workshops!

  Thanks for all the input so far peeps. :) Some things that have been 
mentioned, I hadn't even thought of! I'm taking it all onboard, and hopefully 
it will generate some income and help out on the home front.
