EASY PENNE WITH VODKA CREAM SAUCE

1 16-ounce package penne pasta
1/2 cup chopped onion
1 tablespoon minced garlic
2 tablespoons olive oil
1/2 cup vodka, optional
2 cups spaghetti or marinara sauce
1/2 cup heavy Whipping cream
Shredded parmesan cheese, optional

Cook pasta according to package  directions; drain. Meanwhile, in a large 
skillet, saute onion and garlic in oil until soft. Add vodka. Cook 1 until 
reduced by half, about five minutes. Add spaghetti or marinara sauce and 
bring to a boil. Reduce heat and simmer for 5 minutes. Add cream. Simmer an 
additional 2 minĀ­ utes. Serve over cooked pasta. Sprinkle with parmesan 
cheese if desired. Yields six servings.
