Keyboard, no.  Only attractive option would be the Apple keyboard.

Mouse, Yes.  I bought an "open-box" Belkin USB card for my 7600, 
for $20 (one returned unused) and run Intellipoint Mouse Optical
USB, Iomega USB drive, Canon USB Scanner.

Concentrate on the best card for your plans w/at least
1MB L2 cache.  Main choice is ZIF w/an upgrade
path, or a one-shot for the box.  Some are limited
very much by the bus speed, so check specs carefully.

If you buy a ZIF card, you're more likely to catch a bargain
on a new-2-U upgrade as folks move up with CPU's.

Don't even consider paying retail, even "mail-order" or
catalogue.   My recent "MacXXXX" catalog had 64MB at
outrageous prices - in excess of $80/64mb.  Where to go
is covered by the other replies.

Get the 1MB L2 cache on your upgrade card.  My *bias*
is XLR8 for a keeper, Sonnet if you're looking for the lowest
price/configuration - but that comes at the cost of a 512 cache.

Last bias, IMHO, stick with your SCSI drives.  The IDE's
through a PCI card are cheap but performance is ...
relative.
