OK, currently OS X only works somewhat on the 7500, 7600, 8500, and 8600.
The system will work as long as you don't use any PCI cards. The onboard
video breaks the PCI card support.
OS X is pretty snappy on most hardware. Because most things still aren't 2d
accelerated you don't miss much not having a PCI video card like a Rage
Orion or a Radeon. However, when 10.1 comes out your machine will be much
slower than computers with 2d/3d accelerators.
The cheapest way to get full OS X support is either an iMac or a 9500 with
G3 card and a higher-end ATi video card like Rage Orion or Radeon. The 9500
is the earliest Mac that everything works in.
