Any 50 pin SCSI drive will work fine.  Like you say, if you connect an
UltraSCSI drive, you may not be able to use the drive's full data
transfer capabilities.  The internal SCSI bus of the P'Wave is 10 MB/sec
Fast SCSI 2, so you may not take all that big a hit.  For now, go ahead
and install whatever 50 pin drive you have; but consider getting an
UltraSCSI controller card when you can, especially if you have a drive
with 40 MB/sec or faster data transfer rating.
