There's not much reason to put anything more than 9.1 on a non-G3 that 
won't ever see OS X. It was only enhancements for Classic. There are ways 
around it, though, if you really want it.

I don't think it would be greatly faster on a decent processor. 7300 is a 
604e right?

9.1 would use more, but if you have plenty it shouldn't be an issue.
