1. Which motherboard is preferable, and why?

They are the same mobo; the 7500 has a 601 daughter card, the 7600 has a
604(e) daughter card.

2. My previous forays into the innards of my 7200 were to put in a PCI USB
card, four RAM and three VRAM chips. Is swapping a motherboard something that
I should attempt, or definitely avoid?

Easy as pie; a one-for-one replacement ... but, you'll need the A-V
backpanel card for full 7500/7600 function.

3. Is there a "best" processor upgrade for a 7500/7600 in terms of: the kind
of chip (G3, or G4); the speed; or any other features that I don't know
enough to ask about?

Best bang for the buck is probably a 300 MHz G3 ... one with 1 MB backside
cache.
