In a "proper" Email application, the way you see your mail is set by YOUR client, not by the preferences of the sender. I, for instance, view my mail using Claris Emailer and have set my preferences to use ProFont 10. The subject line in my preferred application is "hard coded" to one "built in" to Emailer. The ASCII code comes down the wire and Emailer displays it how _I_ want it. Unless someone chooses to garbage up the bit stream with a bunch of hypertext or "rich text" code, I really don't care how they choose to view THEIR screen of text.
