Kim,
You say these are desktop G3's, as in the beige ones like a 7x00?
If so, the beige's have a problem where OS X needs to be on the first
8GB of the hard drive, if the Mac has a drive larger than 8GB.
Try partitioning the drive with a smaller than 8GB first partition and
installing OS X on that partition. I never tried it when I had a beige,
this is what I've heard.
If you try a search in the Apple Kbase, it should turn up some articles,
as issues with the beige G3 and OS X were discussed there.
