I have been capturing audio tapes to MP3's for several years now. 
The 7300 like all Macs of that vintage already has CD quality line 
level audio inputs.   You need a tape player with line level outputs, 
an adapter cable from stereo RCA plugs to 1/8" mini plug, an audio 
capture program, and iTunes 1.1 to convert the files to MP3's.  I use 
Sound Studio as I edit out the tape flips and adjust the volume 
sometimes, but you might try Coaster as it is freeware.  I capture 
the tapes as 11.025kHz Mono and convert them to MP3's at 24kbs ending 
up with 2 hour tape at around 21MB - just right for my MP3 player. 
FWIW, the un-compressed files run about 150 MB range for a 2 hour 
tape.
