The 7500 and 7600 differ only in the processor card originally installed 
and the AV stuff with the 7600, otherwise they're identical cards. The 
7300 has a higher bus speed, and will be somewhat faster for a given 
upgrade.

It's cheaper to buy the combo cards. As for USB any card that is OHCI 
compliant (as more and more of them are, as WinXP requires this too) 
will work with Apple's USB extensions. Firewire has only one standard, 
so afaik any firewire card will work in a Mac. Many generic USB cards 
are USB1.1/2.0 now, which will work, but there's no readily available 
USB 2.0 drivers for the mac.

Well, I had many ATA hassles after upgrading to a Sonnet Trio card and 
Jag, but the recent firmware patch for that card seems to have resolved 
things nicely.

I was previously running Jag on the same 7600 (768 mb ram, G4/400 
processor upgrade) on an internal SCSI drive and it's quite stable, and 
eminently usable.

Now I've got it going on a IDE drive it's a bit snappier, and quite stable.
