Quickdraw GX was developed by Apple as a comprehensive font, graphics,
printing, and display technology. For example, Desktop Printing was
originally introduced as part of Quickdraw GX.

I believe that support for GX printing ended when OS8 came out (special
printer drivers were needed to support GX printing in OS7.X), but other
parts of the technology carried forward. Some of these probably eventually
became part of the OS.

Unless you have a program that requires GX, or was written to take
advantage of it when present, you really don't need it.
