Uhm ... TextEdit quits on you? Something is wrong then ... cause its not an unstable application. As far as the format changing thing - its a setting in preferences. I wouldn't code in it myself but just my thoughts about those two things.
Doing anything in X is like herding ants.
With sugar solution in a dropper, perhaps.
OSX is rock solid stable in my experience.
I've NEVER had textedit crash on me.
