The composite out on the Archimedes was monochrome anyway... it uses the same piece from the BBC Micro, its predecessor. You could always try settings the output on the Mac to SECAM to see if it works.
Maybe I did not specify the problem clear enough - to watch video (in) on that mac is as good as ever, the problem is the video out. I will try all suggestions that you kindly gave later, the ability to choose the PAL/NTSC/SECAM is only an option in Apple videoplayer and that has nothing to do with the video out. (??)
