It sounds like you don't have a crossover cable and aren't using a hub (or switch). Without these things, I don't think you can select ethernet in the Appletalk control panel.
Once you connect the computers with a hub and a cat5 cable from each computer to the hub, you can choose ethernet in the Appletalk control panel. The you have to make sure file sharing is on, on the target computer, and Users and Groups is configured properly. Next, go into the chooser, click on Appleshare and the target computer should show up in the window. Enter your password, and voila, you're connected.
