One reason for the slowdown is no video acceleration due to the Voodoo card not being supported in OS X. You will need either the PCI Radeon Mac Edition (7200) or 7000 for OS X on a PCI Mac. The original Radeon is superior but no longer made. Also, take advantage of your ATA card by installing a newer, faster drive.

Even with fast everything OS X won't as "snappy" as OS 9.x, even on an AGP Mac with Quartz Extreme enabled. At least that's been my experience.
